Basta lembrar que a chegada dele à Europa continua a ser um enigma, embora a maior parte dos historiadores continue a afirmar que terá sido um presente bendito das Américas. Entre nós o peru tem desde sempre um lugar de eleição, amplamente desejado, mas nunca conquistado, pelo também delicioso capão, que no Norte, mais exactamente no Douro, representa o papel principal na festa que é ali cada refeição da época natalícia. Antigamente, o peru e a sua vinda para as cidades nesta altura do ano, era um espectáculo pitoresco, folclórico mesmo. Nos nossos dias, o peru deixou de estar reservado apenas ao Natal, come-se durante todo o ano e vende-se em bocados em qualquer talho ou supermercado. Pode dizer-se mesmo que só por encomenda e muita amabilidade conseguiremos nas cidades obter um peru com a pele do pescoço suficientemente grande para lhe rechearmos o papo, como é a nossa tradição. Raras vezes poderemos ver hoje sobre a mesa da Festa um peru orgulhoso da sua condição. À semelhança do que acontece por esse mundo fora com todas as receitas tradicionais, “cada roca com seu fuso, cada terra com seu uso”. É por isso que apesar do frio que por lá faz, me ponho a caminho de Trás-os-Montes, mais exactamente de Valpaços, para lhes dizer como se faz o melhor peru de Natal do Mundo!&lt;br /&gt;O PERU DE NATAL COMO SE FAZ EM VALPAÇOS Para 10 pessoas: 1 peru + 1 kg de sal + 1 ou 2 limões. Para o recheio: 250g de pão de trigo + 3 ovos + 100g de presunto entremeado + 1 colher de sopa de manteiga ou de banha + sal e pimenta. Depois do peru preparado e bem limpo, corte as asas, as patas e o pescoço. Coloque o peru num alguidar coberto com água fria, o sal e os limões às rodelas. Deixe ficar assim de um dia para o outro. No dia seguinte, escorra e enxugue-o com um pano de modo a ficar bem enxuto. Esfregue agora o peru com bastante sal grosso. À parte, para uma tigela, parta o pão em bocados e envolva-os com os ovos inteiros. Junte o presunto cortado em bocadinhos, a manteiga (ou banha) e tempere com sal e pimenta. Encha o peito ou a barriga do peru com este preparado, calcando para que fique bem cheio e coza a abertura com agulha e linha. Leve a forno mediamente aquecido (170ºC) durante 2 a 3 horas. Trinche o peru na mesa e acompanhe-o com arroz de forno feito com os miúdos do próprio peru e uma boa salada verde. Confidências: por estranho que pareça, este peru não é barrado com qualquer gordura antes de ser introduzido no forno. São condições essenciais para que fique suculento: estar bem seco quando é introduzido no forno, nunca ser regado com qualquer líquido ou gordura durante toda a assadura e cozinhar apenas o tempo necessário para que a carne fique cozida mas não seca (geralmente leva entre 20 a 25mn por cada fracção de 500g de peru já recheado). type='text'></title><content type='html'>"Cozido à Portuguesa"&lt;br /&gt;Modo de Preparação:&lt;br /&gt;Cozer numa panela ( pode ser de pressão), a carne de vaca, o pé de porco, o entrecosto de porco, o toucinho e o chouriço. Quando as carnes estiverem quase cozidas, juntar a galinha, a morcela e a farinheira.Quando as carnes estiverem completamente cozidas, retire da panela e reserve.Retirar a quantidade necessária do caldo da cozedura das carnes para cozer o arroz ( duas partes de caldo para uma de arroz).Colocar novamente a panela ao lume (se for necessário, juntar um pouco de água) e cozer as cenouras (cortadas ao meio), os nabos (cortados em quatro), o repolho e a couve lombarda ( separar as folhas) e finalmente as batatas.
